Although some skills and an understanding of theory can be acquired through reading and study, no book can substitute for repeated, hands-on preparation and observations. Recipes intentionally produce lower yields used typically in small schools and teaching kitchens. Be the first to ask a question about On Baking. Daniela transcribed all the delicious traditional baked goods to vegan format. This is an excellent baking bible for professional chefs (I bought it for my son who is a head chef) and amateurs alike. With the new photographs and presentation, the third edition will be a great companion to cooks ranging from beginner, student and even established chefs.

I wish the gluten-free section was bigger, but I wasn't expecting anything all, so short is better than none. It's written in everyday language with plenty of photos to clarify the techniques. How Baking Works: Exploring the Fundamentals of Baking Science, 3rd edition. It's is well organized so I can find what I'm looking for quickly. This is a great textbook for anyone who endeavors to be a baker.
